Almond extract is considerably more flavorful and aromatic than vanilla extract so you will need to use more of the vanilla to compensate. Vanilla extract and almond flavored liqueur are both very good replacements for recipes that call for almond extract.
Your almond extract will be fine for sugar cookies. Other flavor extracts such as orange lemon or peppermint can also be used in place of vanilla but will change the flavor of the finished recipe more significantly. A homemade vanilla flavored milk can be an excellent replacement for vanilla extract. When using vanilla extract in place of almond extract you will need to keep a few things in mind such as the difference in intensity between the two.
Of course even if you use good old vanilla extract you re still cooking with something that contains a fair amount of alcohol. Replace the vanilla with an equal amount of the substitute since they are less strong than almond extract. Many extracts substitute well for each other like almond extract instead of vanilla extract or lemon extract instead of lime extract. The almond has a much stronger flavor so you generally use up to twice as much vanilla.

Obviously there will be a slight but delicious flavor change. If you run out of almond extract while cooking or baking there are certainly substitutions that can be made. If you don t have it on hand or if you re just interested in experimenting a little try almond extract as a substitute. The flavor will be very subtle but the milk might just give those slight vanilla notes that you d otherwise be missing.
Use an equal amount of vanilla flavored soy or almond milk to replace vanilla extract. Split a vanilla bean and remove the gooey part. I normally use half as much almond extract when substituting it for vanilla. It adds a hint of nuttiness but it is a stronger flavor so you need to use less than the amount of vanilla called for in the recipe.
