It is fine to feed your sourdough starter any wheat flour all purpose bread einkorn rye emmer etc and probably many non wheat flours.
This all purpose flour has one advantage though. This can lead to flat dense and gummy loaves. I d been using ka bread flour but kept reading about people using ka all purpose flour and it was just the same worked. All purpose flour absorbs less water than bread flour which can make the dough too sticky to work with otherwise.
There are probably some who use it but most real sourdough aficionados would rather die than mix it into their dough. All purpose flour has a lower protein percentage than bread flour ap usually around 11 8 and bread flour around 13 2 simply meaning it s not as strong. Its protein content is typically between 10 and 12 percent. It s also fine to switch flours regularly.
If you re working on a recipe that calls for bread flour and you don t have any on hand save yourself a trip to the store and a few bucks by using an equal amount of all purpose flour as a substitute. Understandably people are often hesitant to make baking substitutions fearful that the end result won t be the same but the differences are not earth shattering. There is no need for a levain use your sourdough starter in the mix. In this case i d definitely suggest sticking with bread flour for extra chew but if all you have on hand is all purpose flour you ll still end up with a tray of delicious cookies that don t differ too much from the original.
